Seven Layer Salad

2 small bags shredded cabbage
2 c. chopped cauliflower
1 c. chopped green, red or orange pepper
1 lg. chopped purple onion
8 oz shredded cheese
8 or more slices cooked bacon, crumbled
Shredded cooked chicken breast (about 3 cups) - you can use rotisserie chicken
2 c. mayo
1 tbsp. Splenda or sugar
2 tbsp. wine vinegar
1 tsp. Beau Monde seasoning

Layer in a deep bowl: cabbage, cauliflower, pepper, onion, cheese, chicken, bacon. Combine mayo with Splenda or sugar wine vinegar and Beau Monde. Taste it and doctor as necessary. Spread the mayo mixture over the top of the other ingredients. Do not mix/toss until you're ready to serve. Can be made the night before.
