Mexican Fiesta Casserole

1 1/2 lbs. ground chuck

1 large onion, chopped

1 green pepper, chopped (optional)

2 fresh tomatoes, chopped

1 can (10 oz.) Rotel tomatoes

12 corn tortillas 1 (16 oz.) can Ranch Style Beans

1 lb. Velveeta cheese, thinly sliced

1 (10 1/2 oz.) can cream of chicken soup

Salt and Pepepr to taste

 

Brown meat with onion and pepper. Add tomatoes, salt and pepper. In a 9x13 inch pan, layer 1/2 each of the tortillas, meat, beans and cheese. Repeat. Top with soup. Bake at 350 degrees for 35-40 minutes until bubbly.
